Easy and Quick Sweet Potato Pancakes

Ingredients

  • 100 g roasted and mashed sweet potato
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ¼ teaspoon instant coffee (can be replaced with caffeine-free barley coffee for kids)
  • A small pinch of sea salt

Instructions

  1. Using a fork, pierce the surface of the sweet potato in several spots.
  2. Place the sweet potato in a preheated oven at 200°C (without fan) for 40–60 minutes, depending on its size.
  3. Once removed from the oven, insert a fork into the sweet potato. If it goes in easily, it is fully cooked.
  4. Peel the sweet potato and place it in a blender with the remaining ingredients. Blend until smooth and well combined.
  5. Heat a non-stick pan over medium heat. Pour about ½ cup of batter for each pancake.
  6. Cook each side for 3–4 minutes until golden brown.
  7. Serve the pancakes topped with maple syrup or honey, along with your favorite fruits.
