Coconut Curry Salmon with Broccoli

- 4 cups broccoli florets (about 1 medium head of broccoli)
- 3 salmon fillets, cut into large cubes
- 2 tablespoons + 2 teaspoons yellow curry powder
- 1 teaspoon salt (more to taste if needed)
- 2 cans (400 ml each) coconut milk
- Juice of half a lemon (about 2 teaspoons)
- 1 teaspoon coconut sugar
- Fresh chopped cilantro, for garnish
- Sesame oil or coconut butter, for cooking
Instructions
- In a large skillet, heat a little sesame oil or coconut butter.
- Add the cubed salmon and broccoli, and sauté over medium-high heat for 2–3 minutes.
- Sprinkle the curry powder and salt over the mixture, stirring until the salmon and broccoli begin to cook through (about 7–8 minutes).
- Add the coconut milk, lemon juice, and coconut sugar, mixing well.
- Taste the mixture and adjust the salt if necessary.
- Serve the dish garnished with fresh cilantro, ideally alongside brown rice.
