Smoky Cauliflower with Quinoa & Pea Salad

Ingredients

    For the Green Dressing
    • ½ avocado
    • A handful of coriander (cilantro)
    • A handful of basil
    • The green part of 2 spring onions
    • Juice of ½ lemon
    • 3 tbsp extra virgin olive oil
    • Salt and black pepper to taste
    • A splash of water to blend
    For the Cauliflower
    • ½ head of cauliflower, cut into thick slices
    For the Marinade
    • 1 tbsp honey or maple syrup
    • 2 tbsp olive oil
    • 1 tsp sweet smoked paprika
    • 1 tsp minced or granulated garlic
    • 2 tsp chili flakes
    • Salt and black pepper to taste
    For the Salad
    • About 120 g cooked quinoa (≈ ¾ cup)
    • About 100 g cooked peas (≈ ⅔ cup)
    • The white part of the spring onions used in the dressing
    • A small bunch of parsley, finely chopped
    • A drizzle of olive oil
    • Fresh lemon juice
    • Salt and black pepper to taste

Instructions

  1. Prepare the Marinade:
    In a small bowl, whisk together all marinade ingredients until well combined.
  2. Season the Cauliflower:
    Rub the cauliflower slices with the marinade on both sides.
    Place them on a baking tray and roast in the oven at 200°C (400°F) for 30–35 minutes, until the edges are golden and slightly charred.
  3. Make the Dressing:
    Blend all dressing ingredients until smooth and creamy.
  4. Prepare the Salad:
    Combine all salad ingredients in a large bowl and mix well to combine flavors.
  5. To Serve:
    Place the salad on a serving plate, top with the roasted cauliflower, and drizzle with the green dressing.
    Serve immediately.

    ● Garnish with extra chili flakes or fresh herbs for a vibrant look.
    ● Sprinkle 2 tablespoons of pumpkin seeds
    ● Serve warm as a complete meal, optionally topped with grilled chicken or fish for extra protein and omega-3s.
