Instructions
Cook the sweet potatoes:
- Preheat your oven to 375°F (190°C).

- Boil the sweet potato chunks in a large pot of water until they are tender (about 15-20 minutes). Drain and let them cool slightly.
Mash the sweet potatoes:
- Transfer the cooked sweet potatoes to a large mixing bowl and mash them until smooth. You can use a potato masher or a hand mixer.
- Add the almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix until well combined and smooth.
Make the pecan streusel topping:
- In a separate bowl, combine the chopped pecans, oats, almond flour, coconut sugar, cinnamon, and a pinch of salt.
- Add the solid coconut oil or butter, and use your fingers or a fork to crumble everything together until it forms a crumbly mixture.
Assemble the casserole:
- Spread the mashed sweet potato mixture evenly into a greased 9x13 inch baking dish.
- Sprinkle the pecan streusel topping evenly over the top.
Bake
- Bake in the preheated oven for about 25-30 minutes, or until the topping is golden brown and crispy.
Serve
