Ingredients

    For the apples
    • 3 apples, cut into small cubes
    • 2 tsp cinnamon
    • 1 tsp cornstarch
    • 1 tbsp lemon juice
    • 1 tsp vanilla extract
    • 2 tbsp stevia sugar
    For the crumble
    • 1 cup oats
    • ½ cup almond flour
    • 2 tbsp coconut oil
    • 2 tbsp cinnamon and a pinch of salt (for flavor and seasoning)
    For the Custard Topping
    • 2 cups coconut milk or any plant-based milk of your choice
    • 2 egg yolks
    • 1 tbsp cornstarch
    • 2 tbsp stevia sugar
    • ½ tsp vanilla extract

Instructions

  1. Prepare the apples:
    In a bowl, mix the apple cubes with cinnamon, cornstarch, lemon juice, vanilla, and stevia sugar.
    Place the mixture in a pan over medium heat until the apples soften slightly and release their aroma.
  2. Prepare the crumble layer:
    In another bowl, combine the oats, almond flour, coconut oil, cinnamon, and salt.
    Mix well until you get a crumbly texture that can be spread easily.
  3. Prepare the custard:
    In a saucepan over medium heat, mix the milk with the egg yolks, cornstarch, stevia sugar, and vanilla.
    Stir continuously until the mixture thickens and becomes smooth and creamy.
    Remove from heat and let it cool slightly.
  4. Assembling:
    Place the cooked apples in a serving dish or individual cups. Add the oat crumble layer on top, followed by the custard.
    You can bake it in the oven for a few minutes until the top turns golden, or serve it warm or chilled as desired.
