Coconut Curry Salmon with Broccoli

Ingredients

  • 4 cups broccoli florets (about 1 medium head of broccoli)
  • 3 salmon fillets, cut into large cubes
  • 2 tablespoons + 2 teaspoons yellow curry powder
  • 1 teaspoon salt (more to taste if needed)
  • 2 cans (400 ml each) coconut milk
  • Juice of half a lemon (about 2 teaspoons)
  • 1 teaspoon coconut sugar
  • Fresh chopped cilantro, for garnish
  • Sesame oil or coconut butter, for cooking

Instructions

  1. In a large skillet, heat a little sesame oil or coconut butter.
  2. Add the cubed salmon and broccoli, and sauté over medium-high heat for 2–3 minutes.
  3. Sprinkle the curry powder and salt over the mixture, stirring until the salmon and broccoli begin to cook through (about 7–8 minutes).
  4. Add the coconut milk, lemon juice, and coconut sugar, mixing well.
  5. Taste the mixture and adjust the salt if necessary.
  6. Serve the dish garnished with fresh cilantro, ideally alongside brown rice.
