Easy and Quick Sweet Potato Pancakes

Ingredients
- 100 g roasted and mashed sweet potato
- 2 eggs
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- ¼ teaspoon instant coffee (can be replaced with caffeine-free barley coffee for kids)
- A small pinch of sea salt
Instructions
- Using a fork, pierce the surface of the sweet potato in several spots.
- Place the sweet potato in a preheated oven at 200°C (without fan) for 40–60 minutes, depending on its size.
- Once removed from the oven, insert a fork into the sweet potato. If it goes in easily, it is fully cooked.
- Peel the sweet potato and place it in a blender with the remaining ingredients. Blend until smooth and well combined.
- Heat a non-stick pan over medium heat. Pour about ½ cup of batter for each pancake.
- Cook each side for 3–4 minutes until golden brown.
- Serve the pancakes topped with maple syrup or honey, along with your favorite fruits.
