Mocha Chocolate Chia Mousse

Ingredients

    Base Layer (Pudding)
    • 1 cup (about 200 g) coconut yogurt (preferably vanilla flavored)
    • 3 tablespoons unsweetened dark cocoa powder
    • ¼ cup (60 ml) plant-based milk (such as almond milk)
    • 2 tablespoons natural sweetener (such as maple syrup, honey, or agave syrup)
    • 3 tablespoons chia seeds
    Mocha Layer (Topping)
    • 250 g plant-based cream cheese, at room temperature
    • 30 g vanilla-flavored grass-fed protein powder
    • 100 g coconut yogurt
    • 1 shot of strong espresso
    For Garnish
    • A dusting of dark cocoa powder

Instructions

  1. In a bowl, whisk together the coconut yogurt, cocoa powder, plant-based milk, sweetener, and chia seeds until well combined.
  2. Pour the mixture into a glass container, cover, and refrigerate for at least 4 hours (or overnight) until it thickens.
  3. To prepare the mocha layer: beat the plant-based cream cheese with the protein powder, coconut yogurt, and espresso shot until smooth and creamy.
  4. Spread the mocha layer over the set chia pudding base.
  5. Dust the top with cocoa powder before serving.
