Smoky Cauliflower with Quinoa & Pea Salad

Ingredients
- ½ avocado
- A handful of coriander (cilantro)
- A handful of basil
- The green part of 2 spring onions
- Juice of ½ lemon
- 3 tbsp extra virgin olive oil
- Salt and black pepper to taste
- A splash of water to blend
- ½ head of cauliflower, cut into thick slices
- 1 tbsp honey or maple syrup
- 2 tbsp olive oil
- 1 tsp sweet smoked paprika
- 1 tsp minced or granulated garlic
- 2 tsp chili flakes
- Salt and black pepper to taste
- About 120 g cooked quinoa (≈ ¾ cup)
- About 100 g cooked peas (≈ ⅔ cup)
- The white part of the spring onions used in the dressing
- A small bunch of parsley, finely chopped
- A drizzle of olive oil
- Fresh lemon juice
- Salt and black pepper to taste

Instructions
- Prepare the Marinade:
In a small bowl, whisk together all marinade ingredients until well combined. - Season the Cauliflower:
Rub the cauliflower slices with the marinade on both sides.
Place them on a baking tray and roast in the oven at 200°C (400°F) for 30–35 minutes, until the edges are golden and slightly charred. - Make the Dressing:
Blend all dressing ingredients until smooth and creamy. - Prepare the Salad:
Combine all salad ingredients in a large bowl and mix well to combine flavors. - To Serve:
Place the salad on a serving plate, top with the roasted cauliflower, and drizzle with the green dressing.
Serve immediately.
